Cool Mint — Agua Fresca and a Smoothie

Apple, Cucumber and Mint Agua Fresca — makes 1 pitcher

1 green apple, sliced
1 cucumber, sliced
2 tablespoon apple cider vinegar
1 tablespoon maple syrup
3 to 4 cups cold water
1 cup ice cubes
1 bunch of fresh mint

Wash and slice the cucumber and apple and remove the seeds. Place in the bottom of a pitcher, add apple cider vinegar, ice and cover with water, leaving some room for the mint leaves. Stir to combine.

Wash and de-stem the mint, approximately a dozen stems. Massage the mint leaves before placing them in the pitcher. Using a wooden spoon or muddler, push the leaves to the bottom and stir.

Ginger Mint Pear Smoothie — makes 3 cups

2 pears
1 avocado, flesh scooped out
1½ cups packed baby spinach
½ cup cold water
1 cup ice cubes
2 teaspoons minced ginger
1½ tablespoons freshly squeezed lemon juice
10 to 20 mint leaves (to your taste)

Place all ingredients in a blender and blend until smooth.
