Though Mike Frank didn't set out to serve a "meatless Monday" menu at Citizen every week, he's happy cooking without meat for now, citing environmental concerns, a disconnect between diners and knowing where their food comes from and the "machismo" attitude that sometimes accompanies meat-heavy dishes.
