Welcome to the new grocery model. “In an industry that has stopped growing, prepared foods to eat on site or take home offer the opportunity to grow the pie,” explains Sylvain Charlebois, professor of food distribution and policy and senior director at Dalhousie University. The idea is to entice consumers in for the basics, but see them leave with premium, ready-to-go meals that are usually priced by weight.
