Biologists and former public servants, Wilma Vreeswijk and Sylvain Segard, top left, opened Millefleurs in Prince Edward County in 2019, where they grow lavender, raise honeybees, harvest honey and make mead.
Segard is also a sommelier and master distiller. Vreeswijk is a botanist, master gardener and apprenticing potter.
Honey Pie Hives & Herbals approaches mead-making in a fashion more akin to vermouth than traditional winemaking. As their name suggests, herbal goods were central to Bay Woodward and Gavin North’s business specializing in beauty essentials, balms and teas.
About seven years ago, North started producing mead professionally, centering their profiles around Honey Pie’s already established herbal bent.
