Gabrielle Prud'homme, above, started Almanac Urban Mill & Bakery on a mission to boost the local grain economy and to get people thinking about heritage grains, such as Red Fife, Khorasan and Emmer.
“We believe that by growing the demand for good food, we make space for better farming and ultimately create a more sustainable planet,” she says. It doesn't hurt that these grains have more flavour, greater nutritional value and come freshly milled.
