Three years ago this January, Steve Morrier dove into his business full time. But in the beginning, Morrier, a seemingly fun-loving and witty guy, was going through a bitters phase — experimenting with recipes for cocktail bitters — that left him with a ridiculous amount of roots, bark and leaves, commonly used as the flavouring agents. So, he started playing with recipes for tonic, as you do when you have an excess of cinchona bark laying around the kitchen. And after subjecting his family and friends to multiple taste tests and safe rides home, Split Tree Cocktail Co. was born with the release of Tonic No. 3 — the crowd favourite. Now the lineup of hand-crafted, all-natural cordials, tonic and cocktail syrups has grown to six fulltime flavours, including the sour mix, which a cheerful Morrier enjoys with a shot of gin, a good dose of soda and the maraschino cherry on top.
