During Prohibition, moonshine was distilled under the cover of darkness with only the light of the full moon to guide the clandestine operation. The process was rushed, resulting in a harsh, high-proof, unaged spirit worthy of a good wincing. But there is nothing illicit or harried about Top Shelf Distillers' flavoured moonshines. Having recently celebrated their first anniversary, Top Shelf produces more than six surprisingly smooth and flavourful moonshines — apple pie, blueberry, maple, honey, white whisky and Rise 'n Shine, a rye-based version. Using apple cider from Hall's Apple Market in Brockville, the apple pie moonshine is infused with cinnamon, allspice, cloves and a dash of vanilla, making it particularly warm and inviting — words never used to describe moonshine before.
