Now entering its 18th year of business, Bridgehead's bakery pumps out a whopping 300,000 muffins a year, but in response to customer requests for more products made without gluten, it began offering the Exceptional Loaf.

If faced with the imminent threat of a natural disaster or significant world calamity, Bridgehead's Exceptional Loaf is one of the first things to throw in the old emergency grab-'n'-go bag. A single one-inch slice of this dense bread contains hundreds of seeds, nuts and whole grains, but no added flour. It is high in fibre and protein and could seriously stave off hungry for days. Quite different from its wild yeast sourdough breads, this loaf is made with rolled oats, almonds, psyllium seed husks and a blend of chia, flax and sunflower seeds. So don't wait for the call to take shelter, this loaf should be enjoyed regularly as a healthy and satisfying bread, toasted for breakfast or baked into crackers to be served as fancy hors d'oeuvres.
