Makes 10 snack-size servings
5 ripe and delicious local apples
1 tablespoon honey
¼ cup water
1 cinnamon stick
5 cups plain yogurt
2 tablespoons honey
½ cup oats
½ cup pumpkin seeds
½ cup sunflower seeds
¼ teaspoon salt
½ cup honey
¼ teaspoon cinnamon
Peel and core the apples. Cut the apples into bite-size pieces.
In a saucepan, combine the apples, honey, water and cinnamon stick. Cook on medium heat, stirring often until the apples are soft.
Combine the oats, seeds, salt, ¼ cup honey and ¼ teaspoon cinnamon in a mixing bowl. Spread the granola onto a parchment-lined baking sheet and bake at 350F until the granola is golden brown and crispy, approximately 15 to 20 minutes.
Combine the yogurt with 2 tablespoons of honey.
Using a spoon and 1-cup wide-mouth mason jars, layer in a small amount of yogurt, apple sauce and top with some of the crumbled granola pieces.
Secure the lid on the mason jars for your lunch box or enjoy right away.
