Ingredients
- 4 cups yellow onions, thinly sliced
- 1 tablespoon neutral cooking oil
- 1/3 cup maple syrup
- 1 teaspoon fresh thyme leaves, chopped
- 1 tablespoon apple cider vinegar
- Salt and pepper
Instructions
In a large pan over medium heat, add the oil, then the onions and spread them evenly in a single layer. Allow the onions to sit without stirring for 2 to 3 minutes. When the onions start to brown, stir gently. Turn the heat to medium-low and stir the onions gently every few minutes until they have lost most of their moisture and are mostly browned. If anything starts to look too dark, remove the pan from the heat, let it cool slightly, and adjust the heat.
Add the maple syrup and vinegar and cook until the mixture has thickened. Remove the pan from the heat and add the thyme leaves and a pinch of salt and pepper, to taste.
The onions will keep for two weeks in a clean, sealed container in the refrigerator.
