DIY Holiday Gifts: naughty & nice

Wouldn't it be nice to wake up Christmas morning to fluffy pancakes with your choice of cranberry or pear syrup? Or perhaps, if it's not too naughty, you'd prefer to start the day's festivities with a mimosa of sparkling wine, just squeezed orange juice and a few drops of spiced cranberry syrup? Whatever list you find your name on, these fruit and herb syrups are simple to make and may help sway the big guy.

Flavoured Fruit Syrups Makes 2 cup

Try these flavour combinations: cranberry and rosemary, pear and ginger, blueberry and vanilla bean, plum and cardamom.

3 cups of cranberries, chopped pears or your favourite fruit (fresh or frozen)
1 cup of sugar (granulated, honey or maple syrup)
1 cup of water
Optional: 1 to 2 sprigs of herbs, such as rosemary, thyme or a vanilla bean, a cinnamon stick, cardamom pods or 3 looniesized slices of ginger

Prepare the fruit by washing and cutting it as needed. Place all of the ingredients in a medium-sized pot place over medium heat. Bring the mixture to a boil and remove from heat once the sugar has dissolved. In a mixing bowl, strain the mixture through a fine-mesh sieve and pour into clean bottles with tight-fitting lids.

To make soda = 2 parts sparkling water + 1 part syrup + 1 lime wedge + ice
To make a morning mimosa = 1 part syrup + 2 parts sparkling wine + 1 part freshly squeezed orange juice
