One-bowl salty dark chocolate ginger cookies

Is there an occasion for which homemade cookies aren’t appropriate? If there is, we certainly haven’t heard of it. The holidays are that much sweeter with these one-bowl wonders, laced with chocolate and crystallized ginger and garnished with a whisper of salt.

Ingredients

SERVINGS: 18 Cookies
  • 2 cups salted butter, melted
  • 2 cups brown sugar
  • 1/2 cup molasses
  • 2 eggs
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon ginger, ground
  • 1 teaspoon nutmeg, ground
  • 1/2 teaspoon cloves, ground
  • 1/2 cup crystallized ginger, finely chopped (optional)
  • 2 cups dark chocolate chips
  • Maldon salt, for sprinkling

Preparation

Preheat oven to 350 F.

In a large bowl, combine the butter, sugar and molasses. Add the eggs and mix thoroughly. Add in the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and ginger (if using). When the flour is almost completely incorporated, add the chocolate chips.

Roll into 1/4-cup balls and place on three parchment-lined trays with 4 inches between cookies. Sprinkle salt on top of each cookie and cook for 9 to 12 minutes until the edges are nicely browned but the centres are still very soft. Transfer to a rack to cool completely.
