Ingredients
- 2 cups all-purpose flour
- 1/4 cup organic cane sugar
- 1/2 teaspoon salt
- 1 cup butter, cold, cut into cubes
- 1 cup brown sugar
- 2 eggs
- 1/2 cup whipping cream
- 1/3 cup maple syrup
- 1 tablespoon melted butter
Cooking
Preheat the oven to 350 degrees. Lightly oil 8 x 8-inch baking dish and then line with parchment paper.
In a food processor, mix flour, sugar and salt until combined. Add cubed butter and pulse on low until a ball forms. Press the dough firmly into an even layer on the baking dish.
Whisk the brown sugar with the eggs in a large bowl. Stir in the cream, maple syrup and melted butter. Variations: At this point you could add 1 cup of raisins, 1 cup of chopped pecans, 1 cup of bacon, 1 cup of dark chocolate chips or 1 cup salted peanuts. The possibilities are endless, but stick to dry ingredients — nothing wet.
Pour your liquid over the dough and bake in the bottom third of the oven until the filling is puffed (about 1 hour). Transfer to a rack to cool completely — about 2 hours — before removing from the pan and slicing into squares.
