PECish Baking Co.

Website

Owning property in Prince Edward County ("The County") for more than 10 years, getting married in The County, and exploring all of the amazing nooks and crannies has been so exciting for PECish owners and founders, MaTTi Matyasfalvi and Stephen Matyasfalvi.

MaTTi's true weekend passion over all these years was always baking, especially bread, for their home, family and friends. Always finding the freshest and most unique ingredients and meeting tons of characters along the way has simply been amazing in this area.

So baking has been a labour of love and during the pandemic in 2020 it was made very clear that everyone loves bread. There was a need sparked by COVID and so now, they bring bread to the people.

Since they opened their doors April 2021, they have continued to renovate the building to serve customers with our baked goods, but they have mostly expanded the menu with breads, pastries, baked goods and most recently complimentary groceries.

The folks at PECish Baking Co. hope you enjoy sampling their breads, pastries, and baked goods as much as they enjoy making them!

Perth Brewery

Website

Once upon a time...

...a long long time ago (1973) Terry Steeves, a really hard-working hippie buffalo farmer, started making beer in his summer kitchen to share with friends. After a few years the buffalo were retired, timber framing became Terry’s daytime passion. Yet, his after-hours love of crafting beer remained steadfast down through the years. In the early 1990s when the Ontario government began licensing Brew-on-Premise (BoP) beer making, Terry quickly realized it presented the perfect opportunity to share the experience of crafting personalized quality fresh small batch beer with friends and neighbours. So, in 1993 Terry moved his beer making out of his summer kitchen and Perth Brewing Company (PBC) was born.

A state-of-the-art small-batch brewing system was purchased from Cask Brewing Systems. As serendipity would have it, Cask Brewing was a company owned by a Calgary family that Terry’s grandfather and father had done business with many years ago.Things took off from there. Friends became customers, customers became friends, and friends of friends became customers and friends.

Always looking to innovate and enhance the brewing experience customers were introduced to canning their beer in the late 1990s. This came about through the ongoing friendship and business relationship with the owners of Cask, who’d themselves worked hard to evolve the BoP experience by manufacturing single head canning seamers. Thus, PBC became the first BoP to offer customers the option to can their beer and we established ourselves as one of Canada’s largest BoPs and original craft breweries.

As their circle of friends and customers expanded, PBC outgrew its cozy timber-framed downtown Perth location. In 1997, the opportunity to migrate to a renovated warehouse on Highway 7 presented itself, and PBC’s new, larger home took shape, building on its recognizable craft character. Fast forward to 2013 and many memorable hours of shared beer brewing later. The broader world of microbreweries crafting unique brews was gaining traction. Never being ones to rest on our hops,

their unwavering enthusiasm to share our beer with even more people lead to our next natural evolutionary step … the creation of Perth Brewery, sister company to PBC, a licensed microbrewery able to put cans of our freshly crafted beer directly in the hands of our friends and customers.

A whole new world opened up to them that they excitedly embraced bringing our PBC staff, friends and customers along. Many of these folks have been with Perth Brewery from the start and are founding members of our Loyalty Club with fun and quirky stories of their own! Recipes, like those for Last Duel Lager and Easy Amber originating in Terry’s summer kitchen back in the 1970’s hippie days and others such as Calypso IPA, were honed along the way in 50L BoP batches, earning their rightful place as flagship styles of PB.

Ongoing curiosity and passion shared by all of us has grown their line up to 20+ beer styles, all of which are available for free home delivery across the province of Ontario, and many of which are available at your local LCBO, grocery and Beer Store. Today, Perth Brewery's home since 1997 still sits on Highway 7 albeit several incarnations later, more fermenters have been added, their canning seamer upgraded a couple of times and ever more distinctive Terry-style timber framing accents added. With longevity and commitment to those sharing this journey comes gratitude. Gratitude for their staff,  customers and community. All of whom they gratefully call friends and family.

The folks at Stanners Vineyard feel most fortunate to be in the pastoral setting of the Prince Edward County DVA where their passion for the land and for making great wines has resulted in a grand and delicious adventure.

They have a total of 7.5 acres "under vine" planted at high density primarily with Pinot Noir but also Chardonnay and Pinot Gris. The land yields grapes that give their low-intervention wines complex, bright fruit flavours, borne by balanced acidity and minerality, reminiscent of some fine wines of Burgundy but with a "County" signature of its own.

Enjoy a tasting in their strawbale barrel room, bring a picnic to enjoy on the patio, or sip a glass of wine while enjoying wildflowers. Delight flows freely at Stanners Vineyard.

Stone Crop Acres Winery

Website

Stone Crop Acres Winery & Vineyard

Website

Norene Hyatt-Gervais is the owner and winemaker at Stone Crop Acres Winery and Vineyard. After spending years researching and learning about the vines, vineyard design and trellissing, Norene set her sights on winemaking. Finding fantastic mentors and friends in Tom and Janet Moul of Jabulani Winery near Ottawa, Norene spent hours with them learning the craft of wine making with cold climate grapes.

Stone Crop Acres grows 5 acres of cold climate grapes. These varietals thrive in our climate of long cold winters and love our hot summer (especially the dry ones!) in 2007 and 2008 they planted Frontenac Noir, Frontenac Gris, Louise Swenson, Marquette, Sabrevois, Adalmiina and Muscat Osceola. In 2015 they added a beautiful red grape called Petite Pearle. All of these varietals were hybridized at the University of Minnesota using research and breeding stock from a near mythical grape breeding pioneer Elmer Swenson. Stone Crop's vines have survived winters as cold as -40C. They do all their own pruning, trellising and harvesting by hand. Stroll through the vineyard and feel the joy in these well-loved vines.

All of Stone Crop's winemaking is done on site. After harvest, the reds and whites are handled very differently. Whites are gently pressed off of the skins, fermented at cool temperatures in stainless steel tanks and then months are spent clarifying and stabilizing and aging in stainless steel. The results are clean, crisp whites that dance on your palate with bright clear flavours and aromas. Their reds are crushed, fermented on skins in fermentation vat at warmer temperatures than the whites. They are then pressed off of the skins and aged in stainless steel tanks for several months after undergoing malolactic conversion. Transferred to French oak barrels, the reds are then aged until bottling and release.

Each release of their first vintage has been a special celebrated event as they share their new wines with their customers.

Rideau Woodland Ramble

Website

The big idea of the Ramble was sparked by two things - a long term dream to share our gardening experiences with other gardeners and collectors, and the spectacular impact of the ice storm of 1998. Dave Dunn has said "it was like the hand of God coming down and clearing a swath of land that had originally been a mature stand of Red Pine". The clean up in 1999 sparked the idea of making use of this sudden creation of open land in the center of the woodland. The Ramble rose like a "Phoenix from the ashes of the storm", and the idea of the Ramble was truly born.

Roots & Shoots Farm

Website

Roots and Shoots Farm is a small-scale, organic vegetable farm that works to improve the local food system while inspiring their customers to explore the wonders of seasonal produce. They are located in Ste. Cecile de Masham, close to Wakefield in Quebec.

This year they will provide quality organically-grown food through summer, fall and winter vegetable shares (CSA), at grocery stores in the region, and their booth at the Ottawa Farmers’ Market at Lansdowne Park.

In 2012, Roots and Shoots Farm attained certified organic status through EcoCert Canada. In Canada, all certifiers have to meet the National Organic Standards established in 2009. These standards are available on the web here. Although we meet almost every one of our customers face to face on a weekly basis, and despite the fact that any one of our customers is welcome to visit the farm to see how we grow, we still feel it is very important to support the organic standards by becoming certified our selves.

This is because Certified Organic means so much more than just what the consumer sees when buying the product. Certified Organic farms are required to not only keep extremely accurate record keeping of everything that comes in and goes out of the farm, but also ensures that we follow strict standards about:

  • following a sensible, planned, multi-year rotation to break insect and disease cycles on the farm

  • following a composting regime complete with daily temperature recording

  • limiting the amounts of manure brought in from other farms

  • encouraging the integration of animals to make the farm self sufficient

  • using cover crops every year in every field to build organic matter and fertility

  • using only substances on the “Permitted Substances List”, which prohibits any synthetic chemicals, fertilizers or pesticides on the farm

  • recording every seed purchase, buying only certified organic seed, and showing proof that organic seed was adequately sought out if it was not available, and never using treated or genetically modified seed

  • protecting waterways and wetlands from farm runoff

  • requiring that animals have access to free ranging space that is out of doors

In the end, there are many aspects to Certified Organic that are not obvious from reading a label on a Certified Organic product. Certified Organic protects not only the health of the consumer, but also the health of the farmer, the ecosystems that produce the food, the waterways on the farm, and the biodiversity of the farm. It is for this reason that Roots and Shoots Farm supports and adheres to Certified Organic standards.

Shed Chetwyn Farms

Website

Drawn to the bucolic fields and vast waterfront vistas of Lake Ontario in Prince Edward County, the folks at Shed Chetwyn Farms settled on a small farm property of 55 acres just outside the village of Wellington. The farm named Chetwyn Farms (Welsh for “little cottage on twisted road”) has been their home for over ten years. Combining their interest in sustainable farming, concern for animal welfare (alpaca are never harmed to harvest fleece) – and their love for the hand-made process they settled on the exquisite and elegant alpaca.

With backgrounds in design, fashion and retail, they ventured into this new lifestyle, learning how to raise alpaca, produce the finest fleece, process small-run yarn and create or curate a collection of alpaca products. The farm and studio-shop (a converted chicken coop) is now a popular destination in the County and their collaborations with designers, makers and artisans allow them to explore and create all of the product on offer.

Spark Beer

Website

Spark Beer opened in 2020 with a goal to produce and serve the best hoppy, sour and Belgian influenced beers possible. Owners Andrea and John have lived in and around Chinatown for over 20 years and, after seeing the ‘for rent’ sign at 702 Somerset Street West, knew they found the home of Spark Beer. We brew beer using modern techniques, but with some classic Belgian flair.

The majority of our sour beers are aged for over four months. Their oak barrel and foeder releases are also aged from four to eighteen months. Spark releases beers when they’re ready and not a day sooner.

Spark uses as many local ingredients as possible and is working to increase that amount each time they brew. Currently, the team at Spark works with Mississippi Mill Malting for the majority of their malts. They also source some of the best Cascade and Centennial hops from Houblons Pontiac to produce a few of their favourite beers.

Reif Estate Winery

Website

One of Niagara-on-the-Lake's founding family wineries, founded in 1982 by Ewald Reif and later acquired by nephew Klaus W. Reif. Today, Reif produces wines from its vineyard first planted in 1977. Our 125 acre farm is located in the Niagara River sub-appellation where sun-loving grape varieties grow best. The easterly facing slopes and long growing season are moderated by the river as air currents ward off early spring and late fall frosts.

Our vineyard is located in Ontario's warmest sub-appellation, ideal for the production of rich full-bodied wines. But time matters too. Our farm is also home to some of the oldest vinifera plantings in Canada, a benefit to growers in cooler climates like Ontario, as mature vines ripen earlier. They also produce wines that reflect the 'terroir', so when you taste our wines you will taste the essence of our vineyard.

Reif Estate Winery is hosting your next adventure to Niagara-on-the-Lake, with one of their many available experiences. Everything from their grand tasting bar, Winemaker’s loft, food and wine pairings, tours of the estate, food in the sensory garden and more. Visit their website for a full list of experiences.

Spirit in Niagara Distillery

Website

Spirit in Niagara Small Batch Distillery was founded by Arnie Lepp, whose family has been farming for 4 generations. They care for over 200 acres of Tender Fruit, seedless grapes and vinifera grapes and are the owner of the largest single family tender fruit shipping company in Ontario, amalgamated from 5 other independent shippers.

Spirit in Niagara loves peaches, nectarines, yellow plums, blue plums, pears, apricots and cherries – the 7 major fruits in Niagara – and use these to make their special small batch spirits.

Reducing waste with incredible taste.

10% of Niagara tender fruits are wasted each year (calculated as 30,500 tonnes production x 10%= 3,050 tonnes a year. Each tonne can yield up to 700 litres of juice; each litre of juice can be fermented to 10% to 14% and amounting to over 70 litres of alcohol. Our objective is to reduce fruit waste disposal problems and produce a value added spirit product. Only the ripest fruit is selected.

Domestically and throughout North America over the past 5 years, the development of products such as flavoured spirits, premium spirits and coolers have revived interest in spirits. Younger alcohol beverage consumers have developed a more mature taste profile which typically includes spirits as well as wine and craft beer. There has been a noticeable trend back to cocktail consumption. Most fruit based spirits consumed in Canada are imported. All other small batch distillers in Ontario focus on grain or potato based spirits.

A.J. Lepp Orchards has access to significant volumes of wasted tender fruit from its orchard operations and from the custom packing operations at Niagara Orchard & Vineyard Corp. and the growers that deliver fresh fruit for distribution.
