Parma RavioliWebsiteParma Ravioli first opened its doors in 1984 establishing itself as Ottawa’s first fresh pasta shop. At one time, during its three decades of history, the factory was located on the corner of Clarence St. and Dalhousie; it was there, in the heart of the Byward Market, where Parma Ravioli became known for its manufacturing of fresh pasta. In 1994, the current owners, Giuliano Zucconi, Carlo Zucconi and Richard Righi, bought the business. The factory was then moved to its current location in Wellington West (corner of Clarendon and Wellington St.) in 1996. It was at this point that Parma began expanding its store from retail and wholesale to also include catering and an x-press hot food counter. At present, Parma Ravioli is the largest pasta manufacturing company in Eastern Ontario. They continue to introduce new pasta types, sauces, and prepared oven-ready meals to their customers. |

Ottawa Street MarketsWebsiteOttawa Street Markets began as a community gathering spot on Beechwood Ave, in the City’s east end. In the early days, a few vendors, live music and a doomed bouncy castle attracted people from neighbouring communities. It became immediately apparent that people were after a small, local farmers’ market that was close to home. A market that could be reached easily on foot, a weekly attraction for families and a place to connect with local businesses. The Beechwood Market was born. The Beechwood Market has continued to grow and both the onsite and online markets have become a staple in local residents’ weekly agendas. With the advent of Covid 19, the decision was made not to open up the onsite market for the 2020 season. Instead, all vendors were moved to an online platform. Locals rallied to support the effort. It went well enough that both the onsite and online markets were able to open up for the 2021 season. While the success of the Beechwood Market continued, work was being done with the Centretown Community Association to introduce the Elgin Street Market. Centretown’s first farmers’ market. Things got off to a rippin’ start in the Summer of 2021. The Elgin Street Market has since retained its own Online, year round pickup location at Haus of Plants, a local plant shop & cafe, right in the heart of Centretown. Riding the Beechwood and Elgin wave, Ottawa Street Markets will open up its third Onsite community market in the Alta Vista neighbourhood, in Spring 2022. The Alta Vista online pickup location has already proven that residents are keen on supporting local and having a great source for local products to be available to them throughout the year. In January 2022, they launched their FIFTH pickup location in Carlington, at Carlington Coffee House. Working in association with the Carlington Community Association, they are hoping to bring more of the market experience to the neighbourhood. The long term vision for Ottawa Street Markets is to have Onsite and Online pickup locations in at least a dozen neighbourhoods by 2025. The future is in the communities and Ottawa Street Markets is here to help create something exciting, accessible and sustainable. |

Kimball’s journey began at Carmela Estates in 2003 as assistant winemaker while also taking the Grape and Wine certificate program at the University of Guelph. In 2007 he joined Closson Chase where he was the associate winemaker with Deborah Paskus. In April 2017 he left Closson Chase to concentrate on Lacey Estates. Liz Lacey runs the well-appointed tasting room as the retail manager while Kimball’s father Charles Lacey is the CEO at 92. Kimball and Liz’s three children also lend a helping hand not only in the vineyard and retail but in winemaking as well. They look to provide their children with a wealth of knowlege and skills for the bright future ahead of them. KnifewearWebsiteKnifewear owner, Kevin Kent fell in love with Japanese knives when he was the Sous Chef to Fergus Henderson of St John Restaurant London. A few years later he began selling Japanese knives out of a backpack on the back of his bicycle, while working as a chef at River Café in Calgary, Alberta. He often travels to Japan to learn more about the ancient art of knife-making and on one of his trips, he brought cameras into one of the blacksmith shops he regularly visits. The result is the 'accidental documentary', Springhammer. SPRINGHAMMER is a documentary about Japanese blacksmiths who dedicate their lives to making culinary knives (it's also the actual mechanical tool used by the blacksmiths). At the end of WWII, Japan was faced with a burdensome repurposing of many industries and with military swords no longer in demand, despite a tradition carried on since the samurai, the industry turned to the kitchen. Craftsmen, now applying ancient trade skills of blade making to cookery, go largely unnoticed by their countrymen and have to find a new place in the world for their craft. They are working to create a healthy, sustainable soil. A soil to support healthy diverse grass pastures for our cows to graze. The folks at Limestone Creamery are building a better farm ecosystem to address the climate crisis. 12 years ago we built a dairy plant. They began processing their own milk. Community support has been wonderful! Through that support we’ve been able to involve 40 fellow farmers and makers, hire 18 people, help to rebuild the local food system and strengthen food security. 2020 has shown them how fragile that food system is. The creamery includes a home delivery service and farm store where they offer many local and organic whole foods. Ice cream is their latest addition and it has proven to be a remedy for 2020. |

Peter Chorabik and Sarah Allinson-Chorabik, dedicated to providing 100% raw and unpasteurized honey from their own bee yards located throughout the GTA. Current bee yard locations can be found throughout Toronto, Headwaters and Rouge Valley region. Ontario Honey Creations beekeeping experience began in 2012 when Peter decided to follow in the footsteps of three generations of beekeepers before him. They started with two hives and had the desire to expand their apiary. Peter and Sarah began posting ads on a classified site for free honeybee swarm removal services. They were quickly amazed by the demand. As an alternative to calling an exterminator, they founded their sister company Toronto Bee Rescue, which focuses on humane honey bee removals. Their beekeeping hobby grew quickly, and by 2015 they had 120 hives. It was at this point that Sarah decided to leave corporate life behind and focus on building Ontario Honey Creations to share their delicious honey. By 2018, with over 400 hives, Peter left corporate life as well to transition to a full-time beekeeper. Since then, they have been dedicated to growing their apiaries and sharing their honey products with all of you. In 2020, they moved their family to their new farm in Mulmur on Airport Road where they quickly expanded with chickens, turkeys, and their beloved KuneKune pigs.
