Working closely with NAC executive chef, Kenton Leier, participating chefs have created beautiful events and cooking demonstrations, menus for 1 Elgin Restaurant and invited culinary students into the NAC kitchen to work with them and gain some real-world experience in one of Canada's most prestigious kitchens.

It's as if they grow on trees or something — but despite what you may think, starting a seed business is no easy feat. Now in their third year, Jordan Bouchard and Jamie Farris-Manning, owners of Bird & Bee, operate their certified-organic, open-pollinated seed business on an acre of land at the Just Food Farm in Blackburn Hamlet. Keen to re-introduce gardeners to vegetables nearly obliterated with the rise of industrial agriculture, they grow varieties such as Turkey Craw bean, Hanson lettuce and Canadian Crookneck squash that have been forgotten in modern plots, but according to Bouchard, have excellent flavour. The problem is that nearly every type of seed requires a different cleaning technique. “It’s a lot of equipment to accumulate — a lot of which you end up building yourself as you learn to clean each seed type,” Bouchard says. With a steadily expanding catalogue of more than 35 varieties of teeny, tiny seeds, that sounds like a lot work, but it's worth it. The pair is dedicated to preserving diversity within our food system, donating a portion of their yearly harvest to the Seeds of Diversity library.

Preserving and canning has been a lifelong passion of Naneen Keenan, the owner, operator and master canner for County Fare. In 2011, she purchased an existing canning business in Prince Edward County, called Pat’s Jams. Her dream has come to fruition and she renamed her operation Prince Edward County Fare (now called County Fare).

Initially she followed Pat’s jam recipes, but always with the intention of bringing the existing products “up a notch” and transforming the full sugar jams and jellies into healthier products. Using less refined sugar also allows the fresh taste of the produce to take centre stage.

Naneen recognized that processed sugars were (and they still are) a mounting public health concern and a major contributor to the growing rates of diabetes and obesity in Canada. Then she discovered a natural pectin on the market that allowed her to reduce the typical half and half fruit to sugar ratio in jams and jellies to a 4 to 1 ratio. That was her “eureka” moment! Fruit is now the leading ingredient in all of her products. In addition, she discovered a natural sweetener, erthritol, which looks and tastes like sugar but has 0 calories per gram, is easy on the digestive system and is pet-friendly. More importantly, this sweetener is a natural choice for blood sugar control as it does not affect blood glucose or insulin levels, perfect for diabetics.

Álska Farm

Älska Farm, the name of which is a nod to the Swedish heritage
of the owners, and which means "love, adore and cherish", is in
Low, Quebec, about 40 minutes north of Ottawa. Owned by
Genevieve Marquis, Gabriel Jort-Pelletier and their two children,
Téo, 4, and Mika, 2, the family produces maple syrup and pork.
Their home is a picturesque log cabin with a steeply pitched
shingled roof, set atop a small hill on 125 acres, with views down
the winding country road and across the rolling terrain of the
Gatineau Hills.
The couple has been producing maple syrup since 2010 and this
is the product they sell to many businesses in Ottawa, including
The Red Apron — one of their first customers, along with Herb
& Spice on Wellington — Bridgehead, Art-is-In Bakery and
Pure Kitchen, among others.
With more than 300 kilometres of piping from trees on 250 acres
in the Eastern Townships, where the farm was awarded quota by
the Federation of Quebec Maple Syrup Producers, Älska produces
between 20,000 and 25,000 litres of maple syrup annually. Their
primary market is Ottawa because Marquis has roots here and
they live close to the city, but they’ll ship all around the world
and recently sent off 300 tiny party favour bottles to a tattoo and
piercing conference in Las Vegas for a client from B.C. Wedding
favours are also a big market for Älska and the couple will happily
provide customized labels.
Marquis and Jort-Pelletier were married in 2008 and began
homesteading immediately. They started maple syrup production
in 2010 as soon as they were awarded quota, which limits the
amount they can produce and equally sets a minimum price for
maple syrup sold in the province.
“We recognized that there was an untapped market in Ottawa,”
Marquis says, “and we’re one of few producers capable of large
-scale supply.” They were also aided by their youth. Now aged
33 (Marquis) and 38 (Jort-Pelletier) they are spring chickens in
a business where the average age of producers is 62. With their
marketing savvy, energy and ability to deliver to customers
directly, thereby putting a face to local, they quickly gained a foothold with some big customers in the city.
During sap season, Jort-Pelletier is backwards and forwards
between the sugar shack and Ottawa, overseeing operations for a
business that was recently awarded “organic” status. “We boil for
five hours daily, producing about 250 litres of syrup per hour,”
he explains, “using a super-efficient, wood-fired evaporator.”
The sap goes through a process of reverse osmosis, producing
concentrated sugars that they boil for maple syrup and very pure,
unstable water, which is devoid of all minerals. This is the secret
to the organic status of Älska maple syrup. Regular water always
has some form of minerals and salts in it, but the instability of
this by-product lends itself to a secondary use. "We heat this
unstable water, so that it’s really hot and then we use this to clean
the machinery and it is drawn to minerals and salts left behind.
It’s simple, but it’s pure and we take a lot of pride in our superclean
facility,” Jort-Pelletier says.
In the facilities of a regular producer, one not awarded organic
status, there are plenty of chemicals used to clean the machinery,
such as huge amounts of chlorine. “It’s not a coincidence that
since the introduction of technology, the quality and taste of
maple syrup has begun to decline,” Jort-Pelletier says.
And taste for Jort-Pelletier, is everything. He waxes lyrically
about “terroir” in syrup and can clearly identify where the maple
trees grow by tasting syrup. Älska’s trees grow in very thin soil,
basically on a rock at a high elevation. “Our syrup has a very
distinctive pure taste,” he says, “and because there’s very little
organic matter, it’s a clean taste, slightly minerally.”
Älska also produces free-range pork. This season, the couple
expects to raise between 100 and 150 pigs, all of whom live on
their 125-acre farm. These pigs lead a happy life as they rootle
around in the woods and fields of this pristine property.
Their preferred breed is Tamworth, because they are rustic and
hardy, but they tend to grow slowly. So, they’ve got a muddle
of purebreds and crosses that include Berkshires and a strange
breed called Wattle. The latter is black and has a tassel hanging
from each side of its face. This passel of hogs is certainly a mixed
bunch, ranging from piggy pink, to spotted, black and pretty
much everything in between.
Due to slaughter and inter-provincial export rules, the couple sells
the majority of their pork direct to consumer or to restaurants
in Quebec such as Le Hibou and La Maison du Village in Wakefield, as well as Le Rustik in Hull. “Christopher, the chef
there, really does care about where his product comes from and
how it is raised,” Marquis says.
‘We originally started with the pigs to feed our family,” Marquis
says, “then word got out. What we are really trying to do is do
it properly and raise them the right way. And while maple syrup
will always be a luxury product, we also try to make our food
accessible. It’s a goal of ours.”

Located one mile north of Avonmore on the corner of County Road 15 and Fourth Road. The garden has been expanding over the past few years. Their season begins in June with strawberries, raspberries follow in mid July along with 20 different varieties of vegetables, apples and pumpkins complete their season in the fall.
 
Avonmore's onsite pantry is stocked with snacks and drinks, strawberry shortcake, fresh baking, ice cream cones plus jam and freezing supplies.

Founded in 2000, Back Forty is a small creamery and cheese shop located on a farm in the hamlet of Mississippi Station Ontario where cheesemaker Jeff Fenwick hand-crafts artisanal cheeses of the highest quality. Back Forty’s original raw ewe milk cheeses have grown into a local favorite and have become loved and trusted by many of the province's top chefs and cheese lovers alike.

Using traditional old-world methods and 100% natural unpasteurized sheep’s milk, each cheese is made by hand in small batches and then carefully tended to and aged from two to 12 months. In their petite fromagerie they produce six ewe’s milk cheeses: Flower Station, Madawaska, Bonnechere, Highland Blue, Ompah, and Pecorino Verona. In 2018 Back Forty started making cheeses with raw water buffalo milk and introduced the new Calabogie Blue Cheese and Little Antoines.

The Back Forty farm is home to the dairy, cheese shop, and riverside bistro and is located in Mississippi Station, Ontario, an hour west of Ottawa. The shop offers a full selection of our raw-sheep’s milk cheeses, as well as a range of locally made products including cured meats, honey, maple syrup, chocolate, coffee beans, preserves, and Back Forty’s own farm raised grass-fed organic lamb, Highland Beef, and whey-fed pork.

The outdoor live fire kitchen and riverside bistro serve a seasonal farm-to-table menu, including wood-oven pizzas, salads, and tasting boards, and the licensed riverside patio features Ontario craft beer, cider, and wine.  All the produce used in the menu is grown in Back Forty’s organic garden and the meats are all raised on farm, including organic chicken, lamb, Highbeef, and pork.

The Cheese Shop and Bistro is open every Friday and Saturday 11:30-7 from June 16th to Labour Day with a rotating seasonal farm-to-table menu. It’s casual outdoor dining riverside at picnic tables, muskoka chairs, and bar.

She met Matthew Mason-Phillips in that same year and Backyard Edibles quickly grew into a formidable partnership dedicated to the principles of sustainable agriculture and devoted to the dream of farming the city. After seven successful seasons of backyard farming and creating an entire microgreen operation in the heart of the city, all while selling quality produce to retailers, restaurants and at farmer's markets, the duo decided it was time to seek out a farm of their own.

In 2020, Backyard Edibles moved it's entire operation to a beautiful NCC farm property in the east end of Ottawa and  located next to one of Canada's most diverse ecological reserves, Mer Bleue Bog & Conservation Area. It is part of our mission to live and farm in harmony with this unique part of the city and nurture the land through careful observation and key ecological farming practices.

During March 2020, the Blair family, like millions of other families across Canada, found themselves forced to isolate at home as a worldwide pandemic swept across the nation. Living on their multi-generational Westport homestead, they quickly realized how blessed they were to have acreage to roam and woodlands to explore. Taking advantage of a slower-paced lifestyle, they decided to teach their children the art of creating maple syrup, something both Scott and Stacy did as children themselves. Their property is home to hundreds of sugar maples that have never been harvested. During their inaugural year, they not only boiled enough syrup to sustain their family needs for the year, but they also created memories and a budding passion for the production of maple syrup. 

Over the next year, plans were put in place to create a sugar shack with all the necessary equipment to handle 800+ taps. With the addition of two more Blair Brothers in December 2020, ‘Blair Brothers Maples’ was officially born for the 2021 maple syrup season.

Every glass of Calabogie beer is brimming with rich history. 

Calabogie Brewing Co. opened in 2015, but the brewery’s story dates back centuries. They proudly named the brewery after the town of its birth, Calabogie, ON – a small town about a hundred kilometres west of Ottawa.

The town’s name is believed to come from the Gaelic phrase “Calladh bogaidh,” which is pronounced “Cala boga,” and translates to “marshy shore.” Early settlers chose this name to reflect the large presence of nearby lakes. Calabogie rests on Madawaska River, which flows into four lakes: Calabogie, Black Donald, Norcan and Centennial.

In the 1800s, Calabogie functioned primarily as a lumber town, with the river being used to transport logs. The introduction of the K&P Railway near the end of the century transformed the town, pushing the economy to thrive and people to come and leave with ease.

Today, Calabogie is a must-see destination for adventure junkies. From challenging hiking trails and ski slopes to sparkling lakes, every square inch of this town is worth exploring. 

With Calabogie in the name, they have a duty to match the level of excitement that adventurers have come to expect. When they opened the brewery and taproom on the river, they had one goal in mind: to bring people together. 

The dedicated brew team worked hard to develop a series of beers that are satisfying and consistent in their quality. The first beer launched – the Front Porch Kolsch – is still a favourite today. 

In the years since, Calabogie Brewing Company has had the privilege to launch a wide variety of beverages that reflect their passion for great beer. Their signature red taproom in Calabogie has become a staple for visitors, and in 2018, they expanded with a second location in the tech park found in the west end of Ottawa, ON.

In 2021, Calabogie Brewing Co. struck gold at the Canadian Beer Awards in Quebec City, QC. Our winter seasonal beer, named after a well known lake in “The Valley”, Black Donald Irish Stout won the gold medal for a second time (2019 Gold) in the porter category, while our Brown Cow Nitro Milk Stout won the bronze medal in the sweet stout or cream stout category.

Bad Apple Brewing Company

Bad Apple Brewing Company is owned and run by the Ingram family. Jason and Sarah Ingram were raised in Huron County. They have always loved living by Lake Huron and wanted to raise their two children here as well. In 2011, when a property with a beautiful house and century barn, on a 4.9 acre orchard came up for sale and was just a 10 minute walk from the lake, they decided to make it their forever home. They saw all the potential the property had and spent the first three years learning to care for the property and playing around with ideas of what they could do with it.

Jason and his father Sandy both had a passion for home brewing and during those first three years they planted all different kinds of fruit they could experiment with in their home brews: more apple trees, cherry trees, black and red currents and 5 different varieties of grapes. Jason also began building his own home brewing system and haven in the barn. Jason liked the idea of brewing his creations for others. Sarah enjoyed caring for the orchard and liked the idea of opening a farm gate store to sell the apples as well as other local products. In the end, both ideas turned into what is now Bad Apple Brewing Company.

Bad Apple Brewing Company opened in 2014 as a ferment on premises (also known as a U-Brew). Jason had been home brewing for years and wanted to teach his passion for home brewing to others. He had turned his little brewing haven in the barn into a business. You could say Bad Apple is a business literally born in a barn!  In fact, that is what we called one of our first beers! Brewing was fun and something he really enjoyed doing as a side business from his full time job as a sheet metal foreman and estimator. The decision to switch licensing to a Beer Manufacturer allowing Bad Apple Brewing Company to function as a micro or craft brewery was made once Jason was able to increase the size of his brewhouse. He also had many customers coming in asking if they could buy product by the bottle which he was not able to do under the ferment on premises license.

It was September 2016 when Jason and Sarah officially received the new license for Bad Apple, and the business started to function as a craft brewery. Their flagship beer was West Coast White, a wheat beer spiced with a hint of cardamom. It is still one of their best sellers.

In 2018, they were able to grow their brewhouse again. This new brewhouse provided the ability to brew 15 hectolitre batches- still considered small batch, craft beer but greatly increasing the brewhouse output. So after installing the brewhouse himself, Jason made the difficult decision to quit his sheet metal career and go full time as the brewer and president of Bad Apple Brewing Company. Jason enjoys seeing people enjoying his beer creations, talking beer, and telling stories. He also loves giving tours and still loves teaching about the brewing process.

Through the years Jason has worked at perfecting a variety of craft beer recipes. Including the West Coast White, Jim’s Juicy IPA, Apple Blossom Honey Brown, Snappy Apple Sour, Black Monday Dunkelweizen, Irish Red Ale and Bannock Burn Scottish Ale.  He also brews for some local neighbouring businesses in St. Joseph’s. Hessenland Inn asked Jason to brew their Hessenland Helles which has become one of the most popular beers sold at Bad Apple as well as at Hessenland.  He also was asked in 2020 to brew a light lager for the White Squirrel Golf Club, called the Swinging Squirrel- another popular favourite available at the Golf club or at Bad Apple.

Sarah Ingram, Vice President of Bad Apple Brewing Company still likes to focus on caring for the orchard and gardens but also manages the advertising, social media and event planning side of the business. Sarah opened the orchard as a ‘you pick’ business in 2014 and to this day if you want the experience of picking your own fresh apples off the tree, you can come to Bad Apple in September or October and pick. Only now you can also enjoy a beer while you’re out picking your apples!  Sarah also ran with her idea of having a store that sells local products. When you come to Bad Apple you can shop for the latest craft beers they have to offer as well as support other local companies by picking up their coffee, kombucha, meat sticks, hot sauce, maple syrup, spices, charcuterie boards and the list is always growing! Sarah loves helping to organize inventory, choosing what swag to purchase next, and putting on events for the community and Bad Apple patrons. She loves seeing people enjoying themselves and sharing in their passion for great beer, relaxing atmosphere and the beautiful scenery of the Bad Apple Orchard, she likes to call the Bad Apple Badlands!

Jason and Sarah both see the potential for Bad Apple to be a community hub.  This vision really came to light in the summer of 2020 when people needed a safe place to reunite with their family after the first COVID lockdown.  Picnic tables were spread throughout the orchard giving people a place to meet safely with their social circle.  It started with Father’s Day weekend and multiple families commenting that their meeting at Bad Apple was the first time they had seen each other in 4 months, as well as the first time they had really ‘gone out’.  This encouraged the couple to give people more of what they seemed to need: a fun, safe place to enjoy with their friends and family. They brought in food trucks, live music, campfires, and Yoga and Brew in the orchard.

As young twenty-somethings, Mark Thompson and Kristin Dolan always knew they wanted to do something with the family farm. Although their education and eventual careers took them in other directions, their initial inclination was never very far away. In 2010, they bought half of their family's farm and decided to start growing hops. It was from here that their dream to one day own an estate brewery started to evolve.

Since then, they've gleaned some knowledge, accomplished some goals, and constructed a sound idea of what they wanted our business to look like. The folks at Charlottesville Brewing Company have built a kick-ass brewery in one of two incredible turn-of-the-century barns. In the other, they've created a beautiful space, with an adjacent outdoor patio, for guests to lounge, imbibe, and nibble all day long.
