It's as if they grow on trees or something — but despite what you may think, starting a seed business is no easy feat. Now in their third year, Jordan Bouchard and Jamie Farris-Manning, owners of Bird & Bee, operate their certified-organic, open-pollinated seed business on an acre of land at the Just Food Farm in Blackburn Hamlet. Keen to re-introduce gardeners to vegetables nearly obliterated with the rise of industrial agriculture, they grow varieties such as Turkey Craw bean, Hanson lettuce and Canadian Crookneck squash that have been forgotten in modern plots, but according to Bouchard, have excellent flavour. The problem is that nearly every type of seed requires a different cleaning technique. “It’s a lot of equipment to accumulate — a lot of which you end up building yourself as you learn to clean each seed type,” Bouchard says. With a steadily expanding catalogue of more than 35 varieties of teeny, tiny seeds, that sounds like a lot work, but it's worth it. The pair is dedicated to preserving diversity within our food system, donating a portion of their yearly harvest to the Seeds of Diversity library.

An exceptional loaf

If faced with the imminent threat of a natural disaster or significant world calamity, Bridgehead's Exceptional Loaf is one of the first things to throw in the old emergency grab-'n'-go bag. A single one-inch slice of this dense bread contains hundreds of seeds, nuts and whole grains, but no added flour. It is high in fibre and protein and could seriously stave off hungry for days. Now entering its 18th year of business, Bridgehead's bakery pumps out a whopping 300,000 muffins a year, but in response to customer requests for more products made without gluten, it began offering the Exceptional Loaf (also a great vegan option). Quite different from its wild yeast sourdough breads, this loaf is made with rolled oats, almonds, psyllium seed husks and a blend of chia, flax and sunflower seeds. So don't wait for the call to take shelter, this loaf should be enjoyed regularly as a healthy and satisfying bread, toasted for breakfast or baked into crackers to be served as fancy hors d'oeuvres.

Knifewear owner, Kevin Kent fell in love with Japanese knives when he was the Sous Chef to Fergus Henderson of St John Restaurant London. A few years later he began selling Japanese knives out of a backpack on the back of his bicycle, while working as a chef at River Café in Calgary, Alberta. He often travels to Japan to learn more about the ancient art of knife-making and on one of his trips, he brought cameras into one of the blacksmith shops he regularly visits. The result is the 'accidental documentary', Springhammer.

SPRINGHAMMER is a documentary about Japanese blacksmiths who dedicate their lives to making culinary knives (it's also the actual mechanical tool used by the blacksmiths). At the end of WWII, Japan was faced with a burdensome repurposing of many industries and with military swords no longer in demand, despite a tradition carried on since the samurai, the industry turned to the kitchen. Craftsmen, now applying ancient trade skills of blade making to cookery, go largely unnoticed by their countrymen and have to find a new place in the world for their craft. Thankfully, the world seems to be starting to listen.

Sometimes it helps to work backwards. Natasha LeBlanc, a professional chef who trained at the Culinary Institute of Canada in P.E.I before working in some of Ottawa's top restaurants, says "preserving has been our gateway into farming." LeBlanc and her husband, Brian Faraday, are first-time farmers who set their sights and their dream of a market garden on a 65-acre property in Lanark County. Inspired by the heritage apple trees and wild grapes found on their farm, LeBlanc started making preserves to buy the couple time to develop the orchard and berry bushes, which can take years before they produce enough volume to take fruit to market. And because she likes "cooking with booze," LeBlanc started collaborating with local brewers and distillers to extend the season of her product line. Dr. Feelgood Maple Chipotle Mustard, starring Stalwart Brewing Co.’s signature IPA, has a sweet and savoury flavour profile, with a hint of heat and maple. While it's a seedy favourite, LeBlanc also uses Stalwart's Bad Moon rye stout in her barbecue sauce and Big Papa American Pale Ale in an apricot chili jam.
